      <image:caption>Whisky was always in my house since my early childhood, my dad always had a bottle of scotch and enjoyed a whisky and coke… my first taste of whisky wasn’t pleasant - several shots at the uni bar at the stock exchange night on freshers week. It wasn’t until my late 20s that I met Martin and with his persuasion I restarted, trying a couple of different Irish whiskeys which ignited my taste buds, left a warm and satisfying feeling without the distinct taste peat.  From here I started exploring more and more whisk(e)ys covering a vast but no means extensive list of different countries, different ages, different flavours and on many occasions I was left disappointed- one persons perfect whiskey did not equate to another’s. This sparked my interest - how could we help people make better choices using objective data rather than subjective opinions. Martin and I discussed it… over a whiskey or two and RedMac was born…</image:caption>

I was in my late 20s when I started to explore the world of whiskey. Fast-forward by a few years and several 100 different types of whiskey I realised that there are many people out there who don’t understand this golden liquid and don’t trust generic reviews. There is a better way… We can use science and data to help people find their match. It has been done before in other areas of our lives and I can’t wait to see the joy people will have from trying the whiskey they find pleasant, enjoyable, and memorable..</image:caption>

As you may know, like all of the distillery's Sherry Oak releases, it's matured in hand-picked sherry-seasoned oak casks from Jerez, so there's all that well-loved sherried Speyside spice and dried fruit that we expect from Macallan. Nose: Dried fruits and ginger with hints of vanilla and cinnamon. Palate: Soft and rich, with hints of spice, clove, orange and toasted mature oak. Finish: Lingering with dried fruits, ginger and orange zest.</image:caption>

      <image:caption>A delightful single pot still Irish whiskey, Redbreast 12 Year Old is highly praised by a host of notable critics. Distilled at the Midleton site from malted and unmalted barley, it’s then matured in a combination of American oak bourbon barrels and Spanish oak Oloroso sherry butts. We can't get enough of this multi-award-winning whiskey. Nose: Nutty, rich and oily. There are notes of dried peels, ginger, linseed and cut fruits including a touch of melon. Palate: Spicy with great body. Nuts and citrus (peel and juice) with hints of marzipan, dried fruits and a hint of Sherry. You turn it over in your mouth forever. Finish: Long and creamy with custard and spice.</image:caption>

      <image:caption>Perhaps the most intriguing release from the first batch of Midleton's Method and Madness whiskeys, this is a single pot still expression initially matured in Sherry and bourbon barrels, before enjoying a finishing period in French chestnut! Exciting stuff. Nose: Red Liquorice laces, Fresh Rosemary mint and grated root ginger. Palate: Sweet fruit and spice, cinnamon toast and ripe banana. Finish: Aromatic green tea, dissipating fruit and spice and rich wood farewell.</image:caption>

Enjoyably sherried and bottled at cask strength, bottled with an outturn of 528 bottles. Three decades of rest has done this one very well indeed. Nose: Sweet notes of spice and dark chocolate. Palate: Warm and velvety on the palate. Finish: Long rewarding finish.</image:caption>

Redbreast 15 is a rich, thick, sweet, pungent whiskey with loads of flavour and complexity - really good stuff! Nose: Fruity and tangy. Notes of zesty citrus, cut hay, guava, beeswax, manuka honey and tropical fruits. Palate: Creamy and smooth, notes of cooked fruits, fried banana, orange groves, nutmeg, butterscotch and caramel lattes. Finish: Custard, peppermint and grapefruit.</image:caption>
